Salad with fritters and jelly egg yolk

Ingredients

Fritters – 10
1 celery stalk
1 carrot
½ onion
½ zucchini
40 gr dry spelled groats
2 tbs bread crumbs

Pesto
bunch arugula
bunch cashew nuts
parmesan
salt
pepper
olive oil
4 spinach leaves
bunch pumpkin seeds

Dressing
1 tsp french mustard
2 tbs agave syrup
lemon juice
olive oil

Jelly egg yolk 12 h

Marinated shallots
3 shallots (cut them for half and remove the film on the inside)
blackcurrant juice

For salad
Spinach
Broccolli
Wax yellow beans

Method

Grate vegetables on a grater and season with salt and pepper. Let it rest for few minutes. Bring the blackcurrant juice to a boil and add the shallot. Let it soak for five minutes at low heat afterthat take off from the oven and keep it in a liquid for 30 minutes min. In the minewhile make a dressing and blend pesto.
Strain the vegetables off excess water, mix everything ingredients for fritters together. Let it in a fridge for a while. Rinse the spinach and blanching broccoli and wax yellow beans.
